One of my favorite summer treats is zucchini bread. We've had a pretty good crop of zucchini so this versitile recipe came in handy. I really enjoy making this recipe into a bundt cake with a little powdered sugar on top. You can also make it into about 2 dozen cupcakes, just decrease the cooking time to 30 minutes.
Zucchini Bread
2 cups sugar*
1 cup oil*
Blend with mixer.
Add:
3 eggs
3 tsp vanilla
2 cups raw grated zucchini, unpeeled
Blend with above mixture with mixer.
Add:
1 1/2 cups white flour
1/2 cup wheat flour
3 tsp cinnamon*
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
Mix on medium speed until blended. Pour into 2 greased loaf pans. Bake at 350 degrees for 45-50 minutes.
*I substitued the sugar, oil, & cinnamon for 3/4 cup homemade applesauce, 1 cup sugar & 1/4 cup oil.












In a medium saucepan over medium heat, melt chocolate chips with milk and salt; cook and stir until thickened, about 25 minutes. Remove from heat; set aside.
I used strawberry ice cream to make it a little different. Don't be surprised to see this in different variations on the blog later since it was very easy to make & very delicious!!
