Roasted Lemon Garlic Broccoli Noodles with Bacon
I bought a spiralizer at Aldi this summer and LOVE it! It was a fun way to use the produce from our garden. I found a wonderful cookbook, Inspiralized by Ali Maffucci. I tried her version of lemon garlic broccoli with bacon and tweaked it a little.
Roasted Lemon Garlic Broccoli Noodles with Bacon
2-3 servings
1 lemon
1 head of broccoli
6 strips of bacon
teaspoon of minced garlic
dash of crushed chili peppers
olive oil
nutritional yeast (optional)
cashews or peanuts (optional)
Heat oven to 400 degrees.
Wash broccoli. Cut off florets leaving as much stem as possible to spiralize. Use the ribbon blade setting and spiralized the broccoli stems.
On a foil lined baking sheet, sprayed with oil, add the broccoli florets and "noodles". Cut bacon into bite sized pieces and place on top of broccoli. Zest the lemon and juice over the broccoli (I put the lemons on the baking sheet too). Scatter garlic to taste over broccoli. Sprinkle chili pepper to taste over broccoli. Salt and pepper to taste.
Cook in oven for 20 minutes or until broccoli is roasted and bacon is cooked.
Garnish with olive oil, nutritional yeast and nuts if desired.
Trust me, this recipe is delicious!
