Calzones

A couple of weekends ago my husband & I helped the youth at our church make pizzas for a fundraiser. We had some dough left over so that started my pizza making frenzy. I made a BBQ chicken pizza, a white or alfredo chicken pizza, & calzones with sausage & peppers.

I don't have the recipe for the yummy dough we used but I do have a pretty good recipe for the bread machine. This recipe came from my Oster bread machine book.
Pizza Dough
1 cup plus 2 tablespoons water
2 tablespoons olive oil
1 1/2 cup bread flour
1 1/2 cup whole wheat flour
2 tablespoons grated parmesan cheese (optional)
1 tablespoon Italian seasoning (optional)
1 teaspoon sugar
1 teaspoon salt
2 1/2 teaspoons regular active dry yeast or bread machine yeast
Place all ingredients in bread pan in the order listed. Select whole wheat dough cycle.
Move oven rack to lowest position. Heat oven to 400 degrees. Divide dough in half. Pat each half into 12-inch circle on greased cookie sheet with floured fingers. Spread with favorite toppings. Bake 18-20 minutes or until crust is light brown.
To make BBQ Chicken Pizza: saute 1/2 chopped onion in 1 tablespoon olive oil until transparent. Cook 1 chicken breast along with garlic, cumin, cilantro & chili powder (all season to taste). I used Sweet Baby Ray's sweet vidalia onion BBQ sauce, then added chicken & onions & topped with cheddar cheese.
To make White (Alfredo) Pizza: saute 1/2 chopped onion in 1 tablespoon olive oil until transparent. Cook 1 chicken breast along with garlic & Italian seasoning (season to taste). After rolling out pizza dough, top with your favorite Alfredo sauce, then add chicken, then add mozzerella cheese.
